It’s December and it’s time for a bowl of soup. After a long day at work, don’t we all want to sit by the window and enjoy hearty and soul satisfying flavours of a soup?

For my “Soup Stories” the first soup that I made was Tomato-Carrot-Beetroot. Wintertime is the time for carrots and beetroot. The freshness and the balance of these ingredients bring so much deliciousness and warmth to the table.

As I don’t cook often because most of my time goes into baking. Therefore, I chose very simple, seasonal and fresh ingredients to work with.

This recipe is perfect for people who spend long hours at work and don’t have the luxury of spending hours just cooking. Also the ingredients are tasty and easily available.

While doing mise-en-place for the soup I discovered, there were pieces of chicken breast at home. To eat along with the soup, Herb Chicken seemed like a perfect idea. I used Garlic Paste, Olive oil, Herbs (thyme, Basil and Oregano) and Pepper/Salt, to marinate the chicken. It needs to be in the oven at 200 Degree Celsius for 10-15 minutes to be perfectly cooked. Soon after I finished the preparation for chicken, I got back to my soup.

Here is the recipe of the soup, which is simple, tasty and healthy. There is NO oil or butter used in this recipe, but you can add a cube of butter, if you like.

Tomatoes (Medium) 6
Carrots (Medium) 2
Beetroot Half
Potato (Small) 1
Salt / Pepper To taste
Mixed leaves of Herbs (Thyme, Rosemary, Basil, Parsley and Oregano) 2 tablespoons

 

METHOD:

  • Peel the Carrots, Potato and Beetroot.
  • Finely chop carrots, beetroot, tomatoes and Potato.
  • Pour one glass of water into the pressure cooker and add all the finely chopped vegetables.
  • Cook it in the pressure cooker for time period of one whistle.
  • Keep it to cool. Once, the mixture reaches the room temperature, puree it in the food processor. Puree it well so that you don’t need to sieve it.
  • In a pan, heat the pureed mixture and add water.
  • Add Salt-Pepper and the herbs. Check the consistency, balance of the spices and herbs.
  • Serve it hot with the Herb Chicken.

After making this soup at home, I can finally say goodbye to the starchy soups that we get at the restaurants and in the form of packaged soups. Make this soup at home and have a healthy and cozy December.
