Butter Cranberry Cake | Pure indulgence!

My mother has suddenly become famous amongst her friends and it has induced some energy in her for cooking. She and her friends are planning to host a Lavish dinner this weekend for everyone in the neighborhood.

As expected I was given the responsibility for the dessert. Everyone is asking me to bake a cake; therefore I didn’t have to think much. But then I thought if I made just a regular cake would they like it? Not that anyone has said anything, I for some reason am always looking for something more.

I wanted to make classical recipe of Yellow Butter cake. Though this cake is a little too buttery, but its pure indulgence. It is the kind of cake you will find in old English bakeries. In the earlier times Grandmas used to make this recipe for children in the house, during the holidays. Now days you don’t get such cakes in the market but I remember a Jewish Bakery called Nahoum in Kolkata selling such cakes. That bakery is a heritage site. Anyway coming back to my cake, I just wanted to surprise my Mum.

I had some cranberries in my fridge so I decided to make the butter cake along with dried cranberries. I made a mini version of the actual recipe so I took half quantity of the ingredients and baked a cake. The technique involved for making this cake a little different than usual method but its very interesting. I frosted it in the exact same manner as I would frost the final cake.

After a busy day when in the evening I started the whole process it took me only 20 minutes to prepare the batter and to Bake 40 minutes. But the cake was finished in no time.

Its sheer happiness when my friends and family eat the cakes I bake without realizing how much they’ve eaten. That happiness is unparalleled.

Now this recipe is finalized for the weekend dinner.

So here is the recipe for a Yellow Butter Cake with Cranberries.

Flour 260 grams
Sugar 250 grams
Butter 140 grams
Milk 180 grams
Egg yolk 95 grams (5 Large eggs)
Baking Powder 1 tablespoon
Salt ½ teaspoon
Vanilla essence 1 ¾ teaspoon
Cranberries (Chopped) 30 grams

Method:

  •  Whisk the egg yolks, Milk (120 grams) and vanilla extract.
  • Mix the flour with salt, baking powder, sugar, dried chopped cranberries and milk (60 grams)
  • Add both dry ingredients into wet.
  • Add butter and whisk all the ingredients together, do not overbeat.
  • Bake at 150 Degree Celsius for 40 minutes.
  • Keep it to cool, cut the cake from the middle and make it into half.
  • Brush some sugar syrup.

For the Frosting:

  • Beat the whipped cream, add a spoon of cooked (cool) cranberry/strawberry jam into it and mix well.

I love such simple and classic flavors and I guess if you love what you make, it shows….ummm quite literally!!
