I was thrilled after making the Tomato-Carrot-Beetroot Soup, everyone loved it in my family. My dad (who is very difficult to please) has asked me to make it again. So that was a great start for my Soup Stories.

The next Soup I decided to make was Potato and Broccoli Soup. The recipe was available on the net and it seemed easy. Only the thought of working with unusual combination of ingredients got me excited. This is what I love about my job. Who is this lucky, to do new things every now and then?

I had already made Chicken Broth so the whole process became quick. Make Sure the ingredients are boiled well and puree them into a smooth texture. I couldn’t wait to see the end results. Just these simple steps turned the ingredients into a delicious bowl of soup.

So here is the recipe:

Potato 5
Broccoli 1
Butter 1 Tablespoon
Garlic (Paste) 2 cloves
Onion (Chopped Finely) 1
Chicken Broth 4 cups
Salt/Pepper To taste
Water 1 cup

 

Method:

  • Cut the stem of the Broccoli into small pieces. Peel the skin.
  • Boil the Potato and peeled pieces of Broccoli stem in a pressure cooker. (Time period of 2 whistles)
  • In a pan, sautĂ© the garlic and onion in the butter.
  • Add chicken broth into the onion and garlic mix.
  • Once the boiled Potato and Broccoli reaches the room temperature, add chicken broth into it and mix it well.
  • Grind/Puree all the ingredients in a food processor.
  • Heat it gain on the gas, add water and salt/pepper. Check the balance of the spices and the consistency.
  • Add the florets of the Broccoli in the soup. Make sure you tender the florets before adding it into the soup.
  • Serve it hot. You could also add cheese, if you like.

This soup is bit of an indulgence as it has butter (1TBSP) and potatoes (boiled). But for a cold winter night, this soup will bring in the warm fuzzy feeling.
