A quick and simple recipe to make Mango Jam at home.

Oh dear god! The Mango season is over. I have always felt I love watermelon more than any other fruit. However, secretly, Mango has been my weakness. While, I love to eat them fresh and raw, my Mom also makes delicious raw Mango chutney, which I simply adore. I like Mangoes even in shakes, salads, cakes etc. However, this time, I wanted to use Mangoes for making homemade jam, purely for storing the sinfully delicious flavour of Mangoes in a jar.

I also felt that pairing Mangoes with Ginger would add a contrasting flavour to my jam. It’s not a novel flavour combination and I have used it previously. Hence this time, I decided to use fresh ginger and not crystalized ginger. One can use crystalized ginger as well, however, I wanted to check whether using the fresh ones would give a different result. I also added dried thyme into it, which I had bought in Gagar, Uttarakhand.

After keeping the mix of diced mangoes and sugar in the fridge, overnight, I woke up with excitement, only to realise that we were out of ginger. However, my lovely Suman Aunty, our next-door neighbour, came to my rescue and generously lent me some ginger from her kitchen.

Once I started cooking, I realised that despite having bad cough & cold, I was enjoying the process. I have to admit that usually, I don’t enjoy cooking or spending a lot of time in the kitchen. However, if I am trying an interesting recipe or working with ingredients that I love, I feel all perked up.

I have also realised that making jams at home is simple and enjoyable. Also, they are so much better than the packaged jams marred with more preservatives than the actual fruit. It’s always more rewarding to have fresh homemade products than something out of a bottle.

My affinity towards homemade jams grew during my endless trips to the mountains and I am glad that, that love is driving me to make jams at home now.

We do get Mangoes in the market, but I’m fully aware that the season is over. Nevertheless, now I have my Mango-Ginger-Thyme Jam that’ll keep me company for some good 15 days.

So, if you’re a Mango fan like me, do try this simple recipe at home. You can stay around the scent of the Mangoes for a little while longer.

Mangoes 1 large or 2 small
Ginger (Julienne or Pureed) ½ inch
Sugar 1/3 cup
Lemon Juice 1 ½ TBSP (Tablespoon)
Thyme (optional) 1 TSP (Teaspoon)
Lemon Zest 1 TSP

Method:

  • Dice the Mangoes and mix them with sugar. Cover the lid and rest your mix in the refrigerator, overnight.
  • Add the fresh ginger before cooking the mix. Cut them into julienne or puree the ginger if you don’t want the chunks in your jam. And if you plan to use crystalized ginger, add them just before you start cooking.
  • Over low heat, cook the mixture till the sugar is dissolved and a thick consistency is achieved. When the wrinkles appear, stop cooking the mix and add lemon juice, lemon zest and thyme. Keep it to cool.
  • Sterilize the jar and store your jam in it. Spread it over bread, cookies etc and enjoy the deliciousness.
