A recipe that elevates the joy of Green Tea in form of a cake.

N: I am not a Tea-Hater, it’s just that I have never had it.

G: No, admit it. You don’t like tea.

N: How can I say I don’t like it, when I have never tasted it?

G: Well that is precisely why you don’t like it, because you’ve never had it.

N: OKAY. I give up. You win. I don’t like tea or the idea of having tea.

That’s usually how Gurjas and I talk, whenever a discussion around ‘tea’ crops up. Perhaps, as an outsider one might think like Gurjas, but honestly, it’s the ‘dependency on tea’, is what I don’t like. I hate it when people tell me they can’t wake up, poop or even think straight, if they haven’t had their cup of tea.

So yeah, I took up a challenge when I decided to make this green tea cake. While Gurjas was having a good laugh at my misery, I decided to trust my instincts and follow this simple recipe to a T. I measured all the ingredients and prepared my batter without knowing the characteristics of my hero ingredient, i.e., Tea.

Hence, I could not contain my excitement to try the cake once it was out of the oven. However, I was disappointed, as I couldn’t taste much tea flavour in it. The cake tasted more like a normal vanilla sponge. Nevertheless, I frosted the cake and kept it in the fridge.

Few hours later, I served it to my sister and noticed the tea flavour grew stronger and it had a distinct fragrance as well. I could taste the deep earthy flavour of the tea leaves, beautifully compliment the sweetness of coconut cream. I was beaming with joy having found a recipe for a green tea cake that had a tea flavour, which even I enjoyed having.

How I wish I had Matcha Green Tea, but this recipe worked out just fine with normal green tea as well. However, if you can get Matcha Green Tea to make this cake, you’ll be pleased with the pretty green colour your cake will acquire.

So, the next time, you are craving for tea along with your cake, make this Green tea Cake instead. As for me, I think it’s the right kind of addiction.

Ingredients:

Flour 2 ¾ Cup
Baking Powder 3 Teaspoon (TSP)
Salt ¼ TSP
Green Tea 2 ½ Tablespoon (TBSP)
Butter 1 Cup
Granulated Sugar 1 1/3 Cup
Eggs 4 no
Vanilla 2 TSP
Milk 1 Cup

Method:

  • Preheat the oven at 130 Degree Celsius.
  • Sift the flour and add green tea and baking powder into it.
  • In a bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time and keep whisking.
  • Stir in vanilla and whisk properly.
  • Add dry ingredients and milk alternatively and fold the ingredients gently.
  • Pour the batter into the mold and bake it or 30 minutes or until properly cooked in the center.
  • Once the cake is out of the oven, keep it to cool, before you cut it.

For the Frosting:

Egg Whites 4 no
Sugar 1 Cup
Shredded Coconut 1 Cup
Corn Syrup ½ Cup
Salt A pinch

Method:

  • In a bowl, beat egg whites until soft peaks form.
  • Add sugar, slowly and gradually. Keep beating until the egg and sugar mix reach a ‘no drop consistency’.
  • After that, add corn syrup, salt and shredded coconut into the mix and beat until everything is mixed properly.

Assemble the cake:

  • Make sugar syrup (2:1 water and sugar ratio) and add green tea powder to it.
  • Cut the cake from the middle and make two slices of it.
  • Apply sugar syrup on both slices of the sponge. Apply a thick layer of Coconut cream and stick the two slices together.
  • Cover the cake in the Coconut Cream and garnish it with shredded coconut.
  • Rest it for a few hours before you cut it.
