A tale of a mini Lemon Cake

So it was my sister’s birthday 3 days back. She and I were travelling in the mountains for a week before we reached Delhi (a day before her birthday). Throughout the week she only asked for one thing –“Bake a Cake for me”.

I kept thinking about the various ideas as it’s difficult to impress my sister. Either she wants something very exquisite or she just wants a cake with chocolate ganache (yes! she can finish one full bowl of chocolate ganache). Much to my horror she diets as well. One day she binges and next day she eats boiled veggies. So it gets me really confused.  Also it doesn’t take her long to show if she dislikes anything. Actually by telling all this, all I am trying to say is that there was a lot of pressure on me for making the cake.

Her friend, who she shares her birthday with, came down to Delhi on the eve of their birthday. I was stuck in Gurgaon with them (don’t ask how) for the whole day and I had no time to even look at my ingredients, forget baking a cake. Finally I bought a Chocolate Truffle cake and surprised them at midnight. My sister, who is always thinking about cutting the calories, finished almost half a KG Chocolate Truffle cake. So far so good.

Next day i.e. on the day of her birthday I decided to bake a cake. A Lemon Pound Cake with Lemon fondant. Just when I started measuring the ingredients I realized I had only limited amount of Castor sugar. I had to cut the size of the cake and go with a mini version of my original plan. This was when I started panicking. Because if this wasn’t good enough I had no more sugar left to make another cake. This was like how they show on Masterchef Series elimination episode.

Thankfully, I managed to start the process of making the batter. Slowly things started looking good. Only issue was that the size of the cake became really small.

So after I was done with making the batter to baking the cake I was relieved that I survived a pressure test.

My sister was very happy with the cake for two reasons. A) It actually was very tasty. B) It was so small that it got over before we knew it (less number of calories for her).

Everyone in my family loved the cake (well I don’t know if they have a choice). Actually they do, we are a bunch honest people living together. But usually before they say something I only get critical about my work. I am glad that the story was different this time.

I was happy because even after so much drama the Cake turned out to be fluffy, moist and it was perfectly baked. It’s this assurance that a beginner like me yearns for.

So here’s an extremely simple and basic recipe to make this Lemon Cake.

Butter (Unsalted) 50 Grams
Castor Sugar 50 grams
Flour 50 grams
Egg 1 whole egg
Baking powder little less than a pinch
Lemon Zest ½ tsp
Lemon essence 2 drops

 

Method:

Beat the sugar and butter until it’s light and fluffy.

Add the egg and beat until it’s smooth.

Add lemon essence and zest, mix well.

Sieve the flour and add baking powder into it. Then fold the dry ingredients it on the above mentioned batter.

Bake it at 120 Degree Celsius for 25 minutes.

For the Lemon Fondant:

Lemon juice Half a lemon
Icing sugar 30 grams approximately.

Mix the two ingredients until it becomes thick.
